Ice Cream Cookie Sandwiches

Ingredients:

-1 package of Cassavaberry brownie mix, we used our Carob Mix.

-1/4 cup water

-2 TBSP virgin coconut oil

-1 tsp vanilla 

-Your favorite ice cream, we used Cosmic Bliss plant based vanilla

Instructions:

  1. Prepare the brownie dough according to the package directions.
  2. Use a medium cookie scoop to scoop the brownie dough onto a baking sheet. Leave ample space, our cookies spread a lot.  Flatten the dough to about 1/2 inch thickness.
  3. Bake at 375°F degrees for about 10-12 minutes, depending on your baking sheet. (We used an air-bake pan.)
  4. Allow the cookies to cool completely, then freeze them.
  5. Thaw your favorite ice cream for about 30 minutes until it's soft and scoopable.
  6. Spread the ice cream on one cookie and top with another cookie to form a sandwich.
  7. Freeze the ice cream sandwiches until ready to enjoy!
  8. Indulge in this delicious frozen treat! 🍦🍪
