Ice Cream Cookie Sandwiches

Ingredients:
-1 package of Cassavaberry brownie mix, we used our Carob Mix.
-1/4 cup water
-2 TBSP virgin coconut oil
-1 tsp vanilla
-Your favorite ice cream, we used Cosmic Bliss plant based vanilla
Instructions:
- Prepare the brownie dough according to the package directions.
- Use a medium cookie scoop to scoop the brownie dough onto a baking sheet. Leave ample space, our cookies spread a lot. Flatten the dough to about 1/2 inch thickness.
- Bake at 375°F degrees for about 10-12 minutes, depending on your baking sheet. (We used an air-bake pan.)
- Allow the cookies to cool completely, then freeze them.
- Thaw your favorite ice cream for about 30 minutes until it's soft and scoopable.
- Spread the ice cream on one cookie and top with another cookie to form a sandwich.
- Freeze the ice cream sandwiches until ready to enjoy!
