Magic bars made with Cassavaberry Chocolate Chip Cookie Crust, chocolate chips, shredded coconut, cranberries, pecans, covered in sweetened condensed coconut milk and baked.

Cassavaberry Magic Bars ✨

Cookie Base:

  • 1 Cassavaberry Chocolate Chip Cookie Mix

  • 3 TBSP solid virgin coconut oil, melted (just warm, so it won't melt the chocolate chips)

  • ¼ cup maple syrup

  • ½ teaspoon vanilla

Magic Middle:

  • ½ cup chopped nuts (we used pecans)

  • ½ cup dried cranberries (we used apple juice–sweetened)

  • ½ cup unsweetened finely shredded coconut

  • 1/4 cup chocolate chips (we used Pascha Organic 55% Dark)

  • 1 (7.4 oz) can sweetened condensed coconut milk (Let’s Do Organic Original or Azure Market Organics)
    Tip: If the coconut milk is solid, scoop it into a small saucepan and gently warm until smooth and pourable.

Directions:

  1. Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper. We used a glass pan.

  2. In a bowl, combine the cookie base ingredients — Cassavaberry Chocolate Chip Cookie Mix, melted coconut oil, maple syrup, and vanilla. Stir until fully combined.

  3. Press the mixture evenly into the bottom of the prepared pan.

  4. Bake for 15 minutes, then remove from the oven.

  5. Sprinkle the crust with chocolate chips, coconut, cranberries and nuts.

  6. Pour the sweetened condensed coconut milk evenly over the top.

  7. Return to the oven and bake for 25–30 minutes, or until golden brown and bubbly. 

  8. Cool completely before cutting into bars.
