Gingersnap Ice Cream Sandwiches

Directions:

  1. Place the baked gingersnap cookies in the freezer and freeze until firm.
  2. Thaw the ice cream on the counter for about 30 minutes or until soft and scoopable.
  3. Scoop a generous amount of softened ice cream onto the flat side of one frozen gingersnap cookie.
  4. Gently press a second gingersnap cookie on top to create a sandwich.
  5. Smooth the edges of the ice cream with a spatula or butter knife.
  6. Place the ice cream sandwiches back into the freezer to firm up before serving.
  7. Enjoy this perfectly spiced, refreshing treat!
