Gingersnap Ice Cream Sandwiches

Ingredients:
- 1 batch of Cassavaberry Gingersnap Cookies (baked and cooled)
- Your favorite ice cream (vanilla, caramel, or any flavor you love)
Directions:
- Place the baked gingersnap cookies in the freezer and freeze until firm.
- Thaw the ice cream on the counter for about 30 minutes or until soft and scoopable.
- Scoop a generous amount of softened ice cream onto the flat side of one frozen gingersnap cookie.
- Gently press a second gingersnap cookie on top to create a sandwich.
- Smooth the edges of the ice cream with a spatula or butter knife.
- Place the ice cream sandwiches back into the freezer to firm up before serving.
