PB & J Cookies

Ingredients:
- 1 package Cassavaberry Peanut Butter Chip cookie mix
- 1/2 cup dried cranberries
- 1/4 cup virgin coconut oil, melted (warm, not hot)
- 1/4 cup maple syrup or honey
- 1.5 TBSP water
- 1/2 tsp vanilla
Directions:
- Preheat Oven: Preheat your oven to 375°F.
- In a mixing bowl, pour in the Cassavaberry Peanut Butter Chip cookie mix.
- Add the dried cranberries
- Melt the coconut oil, making sure it is not very warm, otherwise it will melt the peanut butter chips.
- Add maple syrup or honey, vanilla and water to the oil. Pour into dry mix..
- Stir the ingredients together until well combined. Let the dough rest for 10 minutes to allow the chia egg to work.
- Using a cookie scoop or spoon, scoop out dough and place it onto a parchment-lined baking sheet. Flatten each cookie slightly with a spatula, to about 1/2 inch.
- Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet before transferring them to a wire rack to cool completely.
