Banana Nut Bread

Ingredients:

  • 1 pkg Cassavaberry Pancake & Waffle Mix

  • 1/4 cup coconut sugar

  • 1 1/2 cups mashed ripe banana (about 3 medium bananas)

  • 3/4 cup water

  • 2 tsp vanilla extract

    • Optional: 3/4 cup chopped nuts (we used walnuts)

Directions:

  1. Preheat oven to 325°F. Grease an 8" loaf pan.

  2. Add the Pancake & Waffle Mix into a large bowl, add the coconut sugar, nuts and stir.

  3. Mash bananas with a fork, until smooth. Add to mixing bowl. 

  4.  Pour in vanilla and water, and mix until just combined (do not overmix).

  5. Pour batter into prepared loaf pan and smooth the top.

  6. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean, and the bread feels firm when the toothpick is inserted.

  7. Let cool in the pan for 15 minutes, then transfer to a wire rack. Cool completely before slicing. Store in an airtight container in the refrigerator. Enjoy!
