
Waffles and Vegan Sausage Gravy

For the Waffles
- 1 package Cassavaberry Waffle Mix (prepare waffles according to package directions)
For the Vegan Sausage
- 1 package Shroomeats Shred It
- 1 tbsp olive oil
- 1 tsp fennel seeds
- ½ tsp thyme
- ¾ tsp garlic powder
- ¾ tsp sage
- ¼ tsp black pepper
- ¼ cup water
For the Gravy
- 2 ¼ cups plant milk (we used almond)
- ¼ cup cassava flour (or gluten-free flour of choice)
- ½ tsp salt
- ½ tsp black pepper
- ½ of the prepared Shroomeats Sausage
Instructions
1. Prepare the Waffles – Follow the instructions on the Cassavaberry Waffle Mix package and set the waffles aside once cooked.
2. Make the Vegan Sausage
- Heat a skillet over medium heat and add olive oil.
- Add Shroomeats Shred It and season with fennel, thyme, garlic powder, sage, and pepper.
- Roughly break up the Shroomeats while cooking and add ¼ cup water.
- Sauté for about 4 minutes, then remove from heat and set aside.
3. Make the Gravy
- In a saucepan over medium heat, warm plant milk.
- Whisk in cassava flour, salt, and pepper until smooth.
- Stir in ½ of the prepared Shroomeats Sausage and continue whisking frequently until the mixture bubbles and thickens.
4. Serve & Enjoy – Plate the waffles and generously top with the vegan sausage gravy. Dig in and enjoy this breakfast! 🌱✨
PRO TIP: Warm your plates in the oven before serving, so your waffles don't cool down so quickly!
