
BBQ Quesadilla

- Cassavaberry tortillas (any flavor)
- 1 cup your favorite filling (jackfruit, mushrooms, tofu, or another protein)
- ½ cup BBQ sauce
- ¾–1 cup plant-based cheese (optional, for extra melty goodness)
- Optional: Oil or cooking spray for skillet
- Optional toppings: sliced green onions, jalapeños, fresh cilantro

Prepare the filling:
If using jackfruit or another protein, sauté it in a skillet over medium heat for 4–5 minutes. Stir in BBQ sauce and cook until warmed through and coated. -
Assemble the quesadilla:
Place a tortilla on a flat surface. On one half, layer BBQ filling and cheese. Fold the tortilla in half. -
Cook the quesadilla:
Heat a lightly oiled skillet over medium heat. Cook the folded quesadilla for 2–3 minutes per side, or until golden and crispy, and the filling is hot. -
Serve:
Slice into wedges and serve warm with salsa, guacamole, or your favorite dipping sauce.
