BBQ Quesadilla cut into four triangles

BBQ Quesadilla

 

  • Cassavaberry tortillas (any flavor)
  • 1 cup your favorite filling (jackfruit, mushrooms, tofu, or another protein)
  • ½ cup BBQ sauce
  • ¾–1 cup plant-based cheese (optional, for extra melty goodness)
  • Optional: Oil or cooking spray for skillet
  • Optional toppings: sliced green onions, jalapeños, fresh cilantro

 

  1. Prepare the filling:
    If using jackfruit or another protein, sauté it in a skillet over medium heat for 4–5 minutes. Stir in BBQ sauce and cook until warmed through and coated.
  2. Assemble the quesadilla:
    Place a tortilla on a flat surface. On one half, layer BBQ filling and cheese. Fold the tortilla in half.
  3. Cook the quesadilla:
    Heat a lightly oiled skillet over medium heat. Cook the folded quesadilla for 2–3 minutes per side, or until golden and crispy, and the filling is hot.
  4. Serve:
    Slice into wedges and serve warm with salsa, guacamole, or your favorite dipping sauce.
