Empanadas

Ingredients:
- 1 package Cassavaberry tortilla mix, any flavor. (4 or 6 count tortilla mix)
- Boiling water
- Desired empanada fillings
Instructions:
- Preheat your oven to 400°F.
- Prepare the tortilla dough according to the package instructions, substituting boiling water for hot water. Be cautious when handling the hot dough.
- Once the dough is ready, divide it into equal-sized balls, about 1/3 of a cup.
- Roll out each ball into a circle about 6-7 inches in diameter using a rolling pin or a tortilla press.
- Place a spoonful of your desired filling on one half of the dough circle.
- Fold the dough over the filling to create a half-moon shape. Press the edges together, using a fork to crimp for a decorative finish. (If using an empanada press, fold the empanada press together tightly, forming the empanada.) We use the 4” Mungsung Empanada Press.
- Repeat with the remaining dough and filling.
- Place the empanadas on a baking sheet lined with parchment paper.
- Bake at 400°F for 25 minutes or until golden brown.
- Let the empanadas cool slightly before serving.
