Empanadas

Ingredients:

  • 1 package Cassavaberry tortilla mix, any flavor. (4 or 6 count tortilla mix)
  • Boiling water
  • Desired empanada fillings

Instructions:

  1. Preheat your oven to 400°F.
  2. Prepare the tortilla dough according to the package instructions, substituting boiling water for hot water.  Be cautious when handling the hot dough.
  3. Once the dough is ready, divide it into equal-sized balls, about 1/3 of a cup.
  4. Roll out each ball into a circle about 6-7 inches in diameter using a rolling pin or a tortilla press.
  5. Place a spoonful of your desired filling on one half of the dough circle.
  6. Fold the dough over the filling to create a half-moon shape.  Press the edges together, using a fork to crimp for a decorative finish.  (If using an empanada press, fold the empanada press together tightly, forming the empanada.)  We use the 4” Mungsung Empanada Press.
  7. Repeat with the remaining dough and filling.
  8. Place the empanadas on a baking sheet lined with parchment paper.
  9. Bake at 400°F for 25 minutes or until golden brown.
  10. Let the empanadas cool slightly before serving.
