Philly "Cheese Steak" Mushroom Wraps

Ingredients

  • Cassavaberry tortillas

  • 1 package mushroom meat (or sliced Bella mushrooms)

  • 1 bell pepper, sliced

  • 1 small onion, sliced

  • Avocado oil or broth, for sautéing

  • Pepper, to taste

  • Your favorite cheese (we used Good Planet Mozzarella)

Instructions

  1. Heat a skillet over medium heat and add a small amount of avocado oil or broth.

  2. Add the sliced peppers and onions and sauté for 8–12 minutes, until softened and lightly caramelized. Remove from the skillet and set aside.

  3. In the same skillet, add the mushroom meat (or sliced mushrooms). Cook according to package directions, or sauté mushrooms for 8–10 minutes, stirring occasionally, until cooked through and lightly browned. Season with pepper.

  4. Return the peppers and onions to the skillet and stir to combine with the mushroom mixture.

  5. Warm a tortilla in a separate skillet. Sprinkle cheese over the tortilla and cover briefly until the cheese melts.

  6. Spoon the Philly-style mushroom filling onto the tortilla, wrap it up, and serve warm.
