Caprese Quesadilla

Ingredients:

  • Cassavaberry Tortillas, made into Garlic & Herb 
  • Diced fresh tomatoes
  • Sliced fresh basil leaves
  • Mozzarella cheese, shredded or sliced.  We like Violife Vegan Shreds.
  • Pomegranate molasses (We like Al Wadi from OliveNation on Amazon) OR Balsamic Vinegar

Instructions:

  1. Heat a skillet over medium heat. Place a Garlic & Herb tortilla in the skillet.
  2. Sprinkle a layer of shredded mozzarella cheese over half of the tortilla.
  3. Add a layer of diced tomatoes and sliced basil leaves on top of the cheese.
  4. Fold the tortilla in half to cover the filling, creating a half-moon shape.
  5. Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown and crispy.
  6. Remove the quesadilla from the skillet and let it cool slightly.
  7. Slice into wedges.
  8. Drizzle pomegranate molasses or balsamic vinegar over the top of the quesadilla and serve immediately.
