Caprese Quesadilla

Ingredients:
- Cassavaberry Garlic & Herb tortillas
- Diced fresh tomatoes
- Sliced fresh basil leaves
- Mozzarella cheese, shredded or sliced. We like Violife Vegan Shreds.
- Pomegranate molasses (We like Al Wadi from OliveNation on Amazon) OR Balsamic Vinegar
Instructions:
- Heat a skillet over medium heat. Place a Garlic & Herb tortilla in the skillet.
- Sprinkle a layer of shredded mozzarella cheese over half of the tortilla.
- Add a layer of diced tomatoes and sliced basil leaves on top of the cheese.
- Fold the tortilla in half to cover the filling, creating a half-moon shape.
- Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown and crispy.
- Remove the quesadilla from the skillet and let it cool slightly.
- Slice into wedges.
- Drizzle pomegranate molasses or balsamic vinegar over the top of the quesadilla and serve immediately.
