Ingredients

Peach Filling

  • 8–9 fresh peaches
  • ⅓ cup coconut sugar
  • ½ teaspoon cinnamon

  • 1 tablespoon arrowroot starch
  • 1 tablespoon fresh lemon juice

  • 1 Cassavaberry All-Purpose Baking Mix
  • 1 tablespoon coconut sugar
  • ¼ cup cold plant-based butter
  • 2 teaspoons vanilla
  • ¾ cup plant-based milk

Instructions

Prepare the Peaches

  1. Preheat oven to 400°F.
  2. Wash and peel the peaches with a vegetable peeler. Cut into 1- 1 ½-inch chunks and place in a 9 × 13-inch baking pan.
  3. In a small bowl, combine the coconut sugar, cinnamon, nutmeg, and arrowroot starch.
  4. Pour the lemon juice over the peaches and stir to combine.
  5. Add the spiced sugar mixture to the peaches and stir until evenly coated.

Make the Biscuit Topping

  1. Pour the All-Purpose Baking Mix into a large bowl. Add the coconut sugar and stir to combine.
  2. Add the cold plant-based butter and cut it into the mix with a fork until the mixture resembles coarse crumbs.
  3. Add the plant-based milk and vanilla. Stir until just combined.
  4. Let the dough rest for 5 minutes.
  5. Drop spoonfuls of dough evenly over the peaches.
  6. Bake for 23–27 minutes, or until the biscuit topping is golden brown.
  7. Let cool slightly before serving.
