Gluten-Free Fruit Cobbler

Ingredients

Fruit Filling

  • 8 cups frozen fruit
  • ⅓ cup maple syrup
  • 2 tablespoons arrowroot starch

Cobbler Biscuit Topping

  • 1 Cassavaberry All-Purpose Baking Mix
  • 1 tablespoon coconut sugar
  • ¼ cup plant-based butter, cold
  • 2 teaspoons vanilla
  • ¾ cup plant-based milk

Instructions

  1. Add the frozen fruit to a large saucepan. Sprinkle with arrowroot starch and add maple syrup. Stir to combine.
  2. Heat over medium-high heat, stirring often, until the fruit mixture comes to a boil. Boil for 1 minute, stirring continuously.
  3. Pour the hot fruit mixture into a 9x13-inch baking pan.
  4. Preheat oven to 400°F.
  5. Pour the All-Purpose Baking Mix into a large bowl. Add coconut sugar and stir to combine.
  6. Add the cold plant-based butter and cut it into the mix with a fork until the mixture resembles coarse crumbs.
  7. Add plant-based milk and vanilla. Stir until just combined.
  8. Let the dough rest for 5 minutes.
  9. Drop spoonful's of dough evenly over the hot fruit.
  10. Bake for 23–27 minutes, or until the biscuit topping is golden brown.
  11. Let cool slightly before serving. Enjoy warm with your favorite dairy-free ice cream or whipped topping! 
  12. Store covered cobbler in the refrigerator.

This recipe was developed using frozen fruit, which releases additional liquid as it cooks. For the best results and the intended consistency, we recommend using frozen fruit.

What type of fruit can I use for this cobbler?
Use your favorite fruit or fruit combination. Berries, peaches, cherries, apples, and mixed berries all work well. (We loved 3 C blackberries + 5 C wild blueberries.)

Can I use a different plant-based milk?
Absolutely! Almond, oat, soy, coconut, or your favorite plant-based milk can be used in the cobbler topping.
