Gluten-Free & Plant-Based Lemon Waffles

Made with Cassavaberry All-Purpose Gluten-Free & Plant-Based Baking Mix

Ingredients

  • 1 package Cassavaberry All-Purpose Baking Mix
  • 1¾ cups milk of choice
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 2 tsp vanilla
  • 2 tablespoons avocado oil

Tip: Zest the lemon before juicing.


Instructions

  1. Preheat waffle iron:
    Preheat your waffle iron over medium-low heat. Adjust as needed while cooking.
  2. Prepare the buttermilk substitute:
    In a measuring cup, combine the milk and lemon juice. Stir and let sit for 5 minutes to curdle slightly.
  3. Mix the batter:
    Pour the Cassavaberry All-Purpose Baking Mix into a mixing bowl. Add the milk mixture, vanilla, lemon zest, and avocado oil. Whisk until just combined—do not overmix.
  4. Rest the batter:
    Let the batter rest for 5 minutes. Do not stir again after resting.
  5. Cook the waffles:
    Grease the waffle iron if needed. Scoop batter onto the preheated waffle iron and cook until golden and crisp on the outside. (Long and slow work best. These thick Belgian Waffles took 8 minutes to cook)
  6. Serve:
    Serve warm with maple syrup, fresh berries, or a dusting of powdered sugar.

Tips

  • Zest the lemon before juicing.
  • Warm plates in the oven before serving to keep the waffles warmer longer.
