Coffee Brownies
Ingredients
-
1 Cassavaberry Chocolate Chip Brownie Mix
-
¼ cup brewed coffee (cooled)
-
2 tablespoons coconut oil, melted (warm, not hot)
-
1 teaspoon vanilla
-
Parchment paper
Instructions
-
Preheat oven to 350°F.
-
Line an 8x8-inch pan with parchment paper. (Glass or ceramic works best.)
-
Pour the brownie mix into a mixing bowl.
-
Melt the coconut oil until just warm—do not overheat, as hot oil can melt the chocolate chips.
-
Add the coffee, vanilla, and melted coconut oil to the mix. Stir until well blended and a thick, cookie-dough-like batter forms.
-
Spread the batter evenly into the prepared pan.
-
Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean.
-
Cool completely before cutting into squares.
Storage
Store in an airtight container at room temperature, or refrigerate or freeze for longer storage.
