Gluten-Free Calzones
Ingredients

1 package Cassavaberry Tortilla Mix

Boiling water (use in place of the hot water called for on the package)

Your favorite pizza toppings (mushrooms, peppers, onions, olives, spinach, plant-based sausage, etc.)

Your favorite cheese (we used almond ricotta)

Marinara/pizza sauce, for dipping
- Optional: Tortilla Press
- Optional: 6" Calzone/empanada Press
Instructions

Preheat your oven to 400°F. Line a baking sheet with parchment paper.

Prepare the tortilla dough according to the package directions, using boiling water instead of hot water. Be careful when handling the dough, as it will be very hot.

Divide the dough into equal portions (about 1/3 cup) and roll each piece into a circle about 6–7 inches in diameter using a rolling pin or tortilla press. Or, use a calzone/empanada press with the included dough cutter to create evenly sized circles to fit the empanada press.

Spoon your favorite toppings and cheese onto one half of each dough circle, leaving about a 1-inch border around the edge.

Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, then crimp with a fork. If using a calzone/empanada press, simply fold the press closed to seal the edges.

Place the calzones on the prepared baking sheet.

Bake for 23-28 minutes, or until the calzones are lightly golden.

Let cool for a few minutes before serving.

Serve warm with marinara sauce for dipping. 🍕✨
