Green Chile Quesadilla

Ingredients

  • 2 Cassavaberry tortillas
  • 1–3½ cups dairy-free cheese (we used Violife or GOOD PLANeT, or your favorite brand)
  • ¼–⅓ cup fresh roasted, diced green chiles

Instructions

  1. Preheat the Pan:
    Heat a non-stick skillet over medium heat.
  2. Assemble the Quesadilla:
    Place one Cassavaberry tortilla in the skillet. Sprinkle half of the dairy-free cheese evenly over the tortilla. Add the diced green chiles, then sprinkle the remaining cheese over the top. Place the second tortilla on top.
  3. Cook the Quesadilla:
    Cook for 3–4 minutes, or until the bottom tortilla is golden brown and crispy and the cheese begins to melt. Carefully flip the quesadilla with a spatula.
  4. Cook for another 3–4 minutes, until the tortilla is golden brown and crispy and the cheese is fully melted.
  5. Serve:
    Remove the quesadilla from the skillet and let cool for a minute. Slice into wedges and enjoy!
  6. Serve with your favorite salsa, or guacamole. Enjoy!
